Find a Budget Friendly Cut of Meat
When it comes to slow cooking, you don’t need expensive cuts of meat. In fact, tougher, budget-friendly cuts like inside or outside round, blade, chuck, or cross rib roasts actually turn out best — the long, slow cooking time breaks down the fibers and makes them tender and flavorful. I usually just grab whichever lean roast is on sale, trim any visible fat, and let the slow cooker do the rest.
Pat the roast dry with paper towels. Season all sides with salt and pepper. Heat a large skillet over medium-high heat with a little oil and brown the roast on all sides, 2–3 minutes per side. This step adds rich flavour.
Remove the roast and set aside. In the same pan, add sliced onion and minced garlic. Sauté 2–3 minutes until fragrant. Stir in 1–2 tablespoons tomato paste, fresh rosemary, and fresh thyme. Cook 1 minute to toast the paste and open up the aromatics.
Spread the onion/tomato paste mixture across the bottom of your slow cooker. Place the seared roast on top. Pour 1¼ cups beef broth and 2 teaspoons Worcestershire sauce around (not on top of) the roast so you don’t wash the seasoning off.
Place cut up turnips and potatoes around the roast. Cover and cook on LOW for 8 to 9 hours, or until tender and slices easily. Let cool in fridge, remove roast and skim off fat.
Strain broth into a saucepan and bring to a boil. Add in one package of Club House Gluten Free Brown Gravy. Let simmer until thickened.
Mash turnips and potatoe together with an electric whisk or hand blender, blend until smooth. Optional: add in a splash of cream.

2 pound beef roast
Salt and pepper
1 Tablespoon of oil
1 small onion chopped
1 to 2 Tablespoons of tomato paste
1 clove of crushed garlic
3 teaspoons of rosemary and thyme combined
1.25 cup of fat free beef broth
2 cups of chopped turnips
1 small potato chopped
1 package of club house gluten free brown gravy
Directions
- Pat roast dry with a paper towel
- Heat oil in a non-stick pan. Brown roast on all sides
- Add onion to saucepan and sauté until soft, 2 or 3 minutes. Add in tomato paste and herbs. Continue to sauté for 2 more minutes.
- Place onion mixture on the bottom of the crock pot and place roast on top.
- Add broth and Worchester Sauce around roast. Place in turnips and potato. Cover and cook for 8 to 9 hours.
- Remove roast and vegetables from broth. Mash vegetables with an electric hand mixer (optional add in a 2 Tablespoons of oat fiber powder and a small amount of oil to emulsify). Slice roast into thin slices.
- Cool broth in fridge. Skim the fat off the broth. Add skimmed broth into a saucepan and bring to a boil.
- Add in gravy mix package and continue to simmer until thickened.
- Portion beef into 3.5 ounce portions. Serve with .5 cup of turnip mash, .25 cup of green peas and half a cup of green beans.
